Shrimp Ceviche

INGREDIENTS 

16-25 jumbo shrimp

¼ c. lemon juice

¼ c. lime juice

2 tomatoes, seeded and finely chopped

½ small red onion, finely chopped

1 jalapeño, seeded and finely chopped

½ c. fresh cilantro, chopped

½ tsp kosher salt

1 avocado, chopped

½ tsp black pepper

DIRECTIONS

  1. Poach shrimp until thoroughly cooked.

  2. Drain and set aside.

  3. Add all ingredients to a bowl and gently toss.

  4. Serve with tortilla chips.
